It is the wine of tradition called “vin col fondo” in the local dialect. It is a blunt wine, unique in its kind: here derives its name “Capo degli Onesti”. The natural and spontaneous fermentation is carried out directly inside the bottle. Once it is ended, it creates a lightly bottom exclusively made of natural yeast. The taste is dry yet balanced, savory with good minerality, slightly bread crumbs and ripe fruit hues, an easy to drink which can be matched with any type of food.

Aroma and taste: Because its fermentation in the bottle this wine gets unique and unmistakable features. It’s possible smelling yeast, bread crumb and ripen yellow fruit which in the mouth offer a dry, blunt and pleasantly savory.
Preservation: Cool space (12-18 degrees) away from light if possible, vertical position. Avoid long time in fridge.
Service temperature: 8-10 degrees. Serving preferably inside carafe/decanter.
Grapes of this particular spumante come from two vineyards: Saccol and Bastia. Gathered the same day, the pressing and the following fermentation can be done together. The outcome is this extraordinary wine able to clear the residual sugar and keep an aromatic complexity and pleasant roundness in the mouth. Its name “Introvers0” means a wine of strong character, not for anybody. It does not give confidence right away, but for whom can wait and loves dry wines this brut “estremo” will give a lot of satisfaction.
