Filiblù is a red wine produced with dried Cabernet Sauvignon grapes. The name Filiblù is originated by the blue color of the strings of grapes left to dry for many weeks, according to the vintage. The result of this long wait is a wine characterized by a remarkable olfactory power, by a very robust structure and by the intriguing notes typical of the drying process. Filiblù at the beginning of the tasting appears to be austere and only with time, by evolving in the glass, it can fully express itself. Thanks to its final residual sugar, Filiblù is particularly suited for the matching with blue cheese and it is perfectly suited for the matching with fifth quarter.
