Roberto Cantolacqua, pastry chef and owner of Pasticceria Mimosa, was born in Tolentino in 1982 and discovered his passion for sweets and all leavened products since he was a child, thanks to his grandfather the baker. So, after graduating from the hotel management school, he began working in the pastry shop "la Mimosa" in Tolentino. This reality becomes a stimulating starting point for his career: he attends many courses of great Italian and international pastry masters. On one of these occasions he met and became great friends with Graziano Giovannini, who taught him and transmitted to him the passion and love for croissant decoration and natural yeast. He participates in various competitions, winning three gold medals and four silver medals, and in 2009 he joins the Marche Regional Chefs Team. After more than ten years of apprenticeship, in 2009, he decided to take over the business to start a new adventure with the pastry shop "Mimosa". So he began to introduce his customers to the art of traditional and international pastry, working with excellent raw materials of the Italian territory.

 

In 2012 he joined the Accademia Maestri Pasticceri Italiani, a prestigious association that brings together the best Italian pastry chefs, united by the desire to promote quality and professionalism of the Italian pastry tradition.
