With the laboratory "Il Nuovo Mondo" in the historic center of Prato, Paolo Sacchetti, winner of the award "Pastry Chef of the Year 2012", satisfies the most demanding gourmets, since, as Vice-President of the Academy of Italian Pastry Masters (AMPI), he feels a strong responsibility to take care of the constant improvement of our pastry. Each dessert is created following a philosophy that - according to him - does not allow for compromises and that foresees the exclusive use of butter (therefore no margarine or other fats) and the use of seasonal ingredients, preferably coming from the territory. Moreover, Sacchetti confesses to have a boast: he knows what people like. But he is not satisfied.
Faithful to the rules of the Academy of Pastry Chefs, which guarantees the taste, healthiness and tradition of sweet recipes, he has taken on the task of protecting the original recipe of the historic almond cookie of Prato and to spread the knowledge around the world. In 2012 he received the Gold Medal - Pavoni Trophy as Pastry Chef of the Year 2012, for his constant commitment during his four mandates as Vice President contributing to the continuous growth of Accademia, for his high professionalism, passion and constant search for Quality that distinguishes him and the continuity in producing endless goodness in the universe of Italian pastry.
